Ridge Gourd (“బీరకాయ”) 500g

Ridge gourd has sharp ridges on the outside but is soft and tender on the inside, with a mild flavor and sweetness of its own that complements any spices you add.  A long vegetable with a dark green ridged skin and a white spongy flesh with soft seeds. It is prepared by removing the skin of the vegetable and then cooked. Ridge gourd is very prominent in Indian cooking.
